Our olives are harvested in October, before they are fully ripe, when their polyphenol levels are at their highest. The fruity freshness of these "young" olives is blended with the intense character of chili peppers, which are harvested in season and dried using natural methods. One adds freshness, the other passion. The result is a balance of nature's two powerful players, harmoniously combined in the same bottle without any chemical processing.

We only use single-estate Gemlik (Trilye) olives from the heart of Southern Marmara. People have tried very hard to plant these 'babies' elsewhere, but they only reach their true potential in their own home, with the iodine-rich winds from the sea. The oil derived from this fruit has both a delicious fluidity and a freshness that defies time.
